Chipotle peppers are traditionally made using ripe (red) jalapeños, so you can set your green ones in a well-lit area to ripen if you choose. This slow process draws out any remaining moisture (concentrating their flavor and improving shelf life), and imparts that decadent smoky flavor that chipotles are renowned for. Though the pepper lacks heat, especially when green and less ripe, some poblanos (particularly ripened red ones) have been known to pack a surprisingly spicy punch. Then I use half smoked and half raw peppers with a 3% brine and ferment them for 3 to 6 weeks and make a fermented hot sauce with that unique smoky flavor. This Mexican breakfast staple consists of tortilla chips that are simmered in a chili sauce and topped with shredded cheese, diced onions, and cilantro. Chipotle Powder capitalizes on the delicious flavor of jalapeno peppers and adds another mouthwatering element by smoking them. Combine smoked chili powder with other ingredients for homemade rubs and seasonings that you can sprinkle over dishes or create roasted or grilled meats that no one has ever tried before.

I take them straight from the smoker and add the freshly smoked peppers directly to my adobo sauce, skipping the other 10 hour drying process. Chipotle peppers are smoked, dried jalapeño peppers, and as such they share the same medium-level heat as jalapeños (2,500 to 8,000 Scoville heat units.
